But what will happen if a single folder or file should be restored?

I don't expect any issues with entire VM restore.
For FLR it looks a little bit different. Our Veeam Explorer for FLR was not possible to restore the data.
One colleague of mine has tested the procedure with Veeam Agent. It should be the same for VM backups.
He temporarily published the volume to the original VM and then used Windows Explorer to copy the files manually to the production disk.
