A quick sanity check, if I may:
For one customer, VEEAM still has an IP-based reference to a decommissioned HyperV cluster object and as such still thinks the cluster hypervisors are still in the wider infrastructure. It constantly prompts for upgrades to the hypervisors since our latest 12.x update, for example
If I was to remove this reference to the IP address and clean up references to the old Hypervisors well after the infra has gone, would this cause any issues in B and R and legacy data backed up?

Removing an old Hyper-V server from the backup server won't be an issue.
You can always restore from old backups to other hypervisor locations, even if the original HyperV server was removed.
