We have just purchased VBR 11, and I have a question about where to put the backup proxies. I've installed VBR11, but we are waiting for our backup repository to be delivered so have some time to work on the design. Our environment is as follows:
5 Hyper-V servers, each having about 10 VMs, all racked on top of each other in our server room
The VBR11 server is a VM on one of these hyper-v servers
The backup repository will be a Windows 2019 server with a ton of disk, located across the LAN on the other side of our building, about 100 meters away.
Should I have each of the hyper-v servers be a Veeam backup proxy, or is it sufficient to just have the VBR11 server hold the proxy service.

Welcome to veeam and the forum.
With HyperV, there are two type of proxies. On-Host Proxy and Off-Host Proxy.
When you add the HyperV environment, veeam will install the necessary components for the OnHost Proxy on each HyperV host. So veeam will use this OnHost proxies for the HyperV VM backups. You don‘t have to deploy anything else proxy related.
I recommend against using an off host proxy. OnHost proxies are more reliable and doesn‘t have any additional requirements as off host proxies does. For example, it needs to be a physical machine. You can‘t use the vbr vm for that.
