Is there any dos and don'ts regarding mixing Windows Server 2012 and 2012 R2 in Veeam backup environment?
Can I have Veeam backup server and repository based on Windows Server 2012 R2 and Hyper-V cluster I backup on Windows Server 2012? Or do all need to be on same version? In my case repository will also use Windows 2012 (R2) Deduplication.

It depends on the type of Proxy Server deployment you have. If you use on-host deployment, Backup Server and Proxy Server can use different OS; but, if in a case of off-host deployment operating systems should be same. Backup repository can have any OS. Here is a similar question.
By the way, before using Windows Server 2012 R2 for Veeam Backup Server, make sure Veeam Backup & Replication 7.0 R2 Update is applied.

Just keep in mind, that if you're willing to use off-host backup, off-host proxy should be installed on a host that has the same OS version as the Hyper-V host itself (and that is not a part of a cluster).
