I need to reinstall the OS on one of our Off Host Proxies which also is a repository server, is there anything I need to get from the server before I do that?

Hello,
from a Veeam perspective not. Backup files are self-sufficient. Assuming that the machine will come up again with the same IP / hostname, one only needs to go through the managed server wizard again / rescan repository and everything continues to work.
