Hello,
on our file server we will have a lot of "archive data" which will
a) only change on weekly/monthly basis
and
b) are not time critical during restore.
The "archive data" are stored an a seperate virtual disk.
The idea (based on input here) is to have different backup jobs: one daily or every X hours (still to be discussed internally) for the important data and a second one only for the archive data (once a week).
During restore I first will restore the important data to a replacement server. Can I then later restore the archive data to that location as well?

Yes, you can use VM File Restore to restore a single or multiple virtual disk (vhd/vhdx file) back to production storage. After the restore with Veeam, you can attach the restored vhd or vhdx as a virtual disk with the hyper-v manager.
