I won't get into the VMWare thing here, but we are now looking to go to HyperV pretty quickly as we had a build ready to go from VMWare.
My question is around DR. We used to sync replicas via Veeam between VMWare servers and it worked really well. Can we restore Veeam VMs to HyperV easily, or is this a bit of a process?

You can use instant VM recovery to migrate to Hyper-V:

I suggest you run a test with a medium sized non-critical VM to see how the process works and how long it takes to "recover" the data to the HyperV host and finalize the recovery.
Please note, there will be new backup chains after the migration for the Hyper-V VM. Make sure to have enough backup storage to keep two different backups of your VM (vSphere + Hyper-V) for your retention period.
