Is it possible to use Synology DSM 7.2 feature for immutabality? Can the immutability feature of 7.2 be used instead of setting a Linux front-end for a hardened repo?

Hello, in general we do not recommend using NAS without enterprise-grade RAID controller w/BBWC as backup targets for reliability considerations. Such storage devices represent vast majority of backup data loss/corruption cases in our support.
We do not test against Synology in our QA labs so it's hard to say what would be the consequences of enabling this particular feature. In theory, native storage snapshots should not impact Veeam anyhow, because they do not impact the "live" storage volume or its content.
This certainly cannot be consider a replacement for a hardened repo though due to a huge attack surface exhibited by this kind of storage devices.
