Hi,
I have a server running Windows Datacenter 2020 on which I host around 20 VMs within Hyper-V.
I have Veeam backing up the VMs and the base OS.
What would be the best way to shift this server to new hardware?

Assuming you don't have a Hyper-V Cluster, you can use a Veeam Replica Job to replicate the VMs to a new Hyper-V host and then do a planned failover on the day of the migration.
Please be aware, after the migration to the new Hyper-V server, those VMs will be recognized as new VMs. Meaning you need to adjust your backup jobs and the job will create new backup chains.

The Hyper-V Host itself must be installed by you and not "restored by Veeam".
