FYI the release notes at https://www.veeam.com/download-version.html still point to v5.0.
Also, I didnt see a Whats New (which I believe is usually a different document).

This was purely a patch release so no additive "what's new" or other release notes. Please take a look at this KB article which describes the fixes - https://www.veeam.com/kb4521
While no new functionality was explicitly added some new VBR 12.1 features (four-eyes authorization, ad hoc scans, scheduled scans i.e. SureBackup "lite") are now available for AHV backups. Please refer to the VBR "What's New" guide in the AHV section - https://www.veeam.com/veeam_backup_12_1 ... new_wn.pdf
