We would like to outsource our VM backups to an S3.
We are currently doing a POC. We have a VBR server that backs up VM's to a Scale-Out that integrates a repository on a StoreOnce storage array in DataCenter and an S3 Bucket.
We would like to make sure that we keep the data for 7 days on the DataCenter storage and then 30 days on an S3 Bucket.
We would also like to be sure that in case of a disaster on our DataCenter we can restore the data from AWS.

That is possible if in your Backup Job you configure 30 days, as it is StoreOnce probably synthetic, or full backup weekly is fine.
This job will be sent to a Scale-out Backup Repository. That SOBR has a Performance Tier > Your HPE StoreOnce, and a Capacity Tier > Your AWS S3 bucket (which I recommend you enable Immutability)
Now on the Capacity Tier, you should mark COPY, and MOVE (for the Move, just select move backups after 0 days)
This MOVE will wait until your chain is inactive, meaning the synthetic/full happening on Saturday, will move that chain to S3 and keep it there for 30 days more or less.
That should be optimal, as it is forward incremental, and I doubt your first backup will be on Saturday, you might end up with a few more points here and there, but it should be fine.
That will make you achieve what you are looking for.

You will need to increase source job retention to have the total period of 37 days or so and also make sure that parts of backup chain backup inactive regularly by creating full backup. More information about chain logic selection can be found here. Thanks!
