To be on the safe side, leave them at defaults for now... as usual with any new technology, it will probably take at least half a year of observing usage in real-world environments to establish some best practices.

Compression settings not important but i curious about workload settings. What's the difference Instant Access Restore and Traditional Backup Restore?
All my customers use DDboost. So DDboost access datadomain Random or Sequential? If this settings decrease merge time or restore time this will be huge improvement.
I want to test this settings but i dont know about Veeam access type.

It varies depending on backup or restore type. For example, Active Full or forward incremental backup is sequential to the most part, but reversed incremental backup and most restores are random.
