Is it possible to create a Custom Email in Enterprise Manager? I need to add certain fields to the body of the email to that our call handling system can take the email an auto process it (it's Peregrine).

Steve, there's no ability to affect notification body via VBR UI. You can use several variables in the subject of the e-mail though (described in the user guide). Thanks.
