If your SAN has iSCSI (and as I can see from its specs, it does), you can configure it for Direct SAN access for VMware. Another option is to use hotadd mode (Virtual Appliance) which provides similar data retrieval speed.

For Hyper-V, the preferred way of data retrieval is using an off-host backup proxy (hardware VSS provider required).

It depends on the SAN you are using, if it's FC then yes you need to have physical Veeam proxy with an HBA (I have a doubt about NPIV as a possible workaround but have never tested it), if it's iscsi you can use the Veeam VM as iscsi initiator.

Otherwise, you can leave Veeam in a VM for management purposes and deploy a physical machine with only the Proxy role installed.

NPIV wouldn't work, so iSCSI is the only way to use direct SAN backup mode with virtual proxy.

Just make sure the host running backup proxy server has all datastores where protected VMs' disks reside connected to it. Here you can find the list of limitations on using Virtual Appliance mode.

Make sure you backup proxy VM is configured with 4 vCPUs or more (depends on the number of concurrent backup jobs running on this server).

thanks that's a little more
that i have foreseen indeed
the first backup run at 80 mb /s secong 600 mb/S
Just to be sure does VA mode require network traffic , i suppose not ?

Please review the sticky FAQ section regarding Virtual Appliance mode. Should answer this and other possible questions.
