Anyway to view the amount of disk space used during snapshot

I have logged into the vSphere and looked at the datastore a few times during snapshot (when backup is running), but is there any log on Veeam where I can actually see?

We are looking to move the Exchange server to another datastore but is concern about disk space.

It might be worth putting into use Veeam ONE. Not only does it allow you to monitor the actual snapshot size, but also it has pre-defined alarm that will notify you if the certain threshold (snapshot size) is exceeded.

Is it a one-time need or a monitoring activity you want to have ongoing?
If it's a one-shot, you can either look via shell or ssh at the folder where the VM resides, and look at the size of the delta file, or use free tools like RVtools to see the size of the snapshot. I would prefer the shell method, since it allows you to monitor in real time the growth of the snapshot. A quick command like:

watch ls -al

Will show you in real time the files in the directory, updated every two seconds. There you can watch the snapshot as it grows.
