Hello,
I found the example script to veeamzip VMs through powershell, but it only seems to accommodate one vm host. Is there a way to backup VMs on several HyperV hosts in one script? Or would I need to nest a script for each host inside another script?

If you have multiple hosts, then you have to adopt the script. Do you have a Hyper-V cluster / SCVMM? I recommend checking out the current documentation instead of a 7 years old blog post. The commands might have changed during that time
