Hi,
When I set up my backup to the Azure cloud I cannot for the life of me remember seeing, once filled (I set 10 TB size on the Azure side) what happens, does it auto rollover and delete the oldest file, or where are the options to tell VEEAM what to do once full?

No, there are no options available. Our customers typically set their retention policy according to their business requirements, which are often driven by legal/compliance requirements. As such, deleting older backups which are still within the retention policy would cause big issues.
