In addition to the normal VBK/VIB/VBM files, a few of our users also have ZIP files in their backup target folder that are named like this:
appliance_log_24-03-2016_01-56-30.zip
appliance_log_24-03-2016_03-15-30.zip
What are these for, and can I delete them?

These are the logs that could be needed for support if you run into an issue. If endpoint is however running fine you can remove these

True. Veeam Recovery Media keeps its own logs in the backup repository once you start the Bare Metal Restore.
