I need to backup a Windows 10 box with *ALL* the files on the HD, including recycle bin and maybe files in $recycle.bin no more associated with any profile.
I created a job to backup the entire computer.
Can I presume that *ALL* the files are saved, including all the files in the $recycle.bin folder?
Is there any additional option I should select?

No you can't. Veeam relies on Microsoft VSS to take snapshots of protected volumes and perform backup. Microsoft VSS has it's own way to exclude "unneeded\not recommended" files, so Veeam does not have to worry about it and follows MS guidance. Some parts of a system are excluded by default as non-needed for entire system recovery, and including those back would be going against Microsoft recommendations.Can I presume that *ALL* the files are saved

i also that this problem, that veeam will not backup the recycle bin
that web page from micro$oft makes no reference to the recycle bin.
took me a long time to figure out that, veaam agent, when starting a backup, will on the fly create a set of exclusions and then when the backup completes, then delete a set of exclusions.
here is an example of that.
the key is named VeeamExcludePaths and this is the contents
$AllVolumes$\pagefile.sys
$AllVolumes$\hiberfil.sys
$AllVolumes$\swapfile.sys
$AllVolumes$\$Recycle.Bin\* /s
$UserProfile$\AppData\Local\Temp\* /s
$AllVolumes$\System Volume Information\*{3808876B-C176-4e48-B7AE-04046E6CC752} /s
as a workaround, if you want to make sure that the recycle bin is backed-up, you can run this command before the backup starts.
this will set the attribute of all the files to read-only.
then, for whatever reason, veeam will ignore it own exclusion list and backup those files.
attrib +R /S C:\$RECYCLE.BIN\*.*
