How can I restore some of my latest W11-22Hx as VMware VM or Hyper-V VM?

Yes, you can use Instant Recovery with a VBR server:

Or use the recovery media to restore the backup to the vm.

I recommend using the instant recovery method.

Please note, windows 11 22H2 is not yet supported and have known issue with the recovery media.
