Hi
Is it possible to use rotating NAS drives in the same way as you would usb drives?
The nas drives would have the same name and shared folder

No, its currently not supported, but you can switch the NAS target any time you want by changing the backup job configuration.

The nas name and shared path will be identical
eg \\nas1\backup
would Veeam endpoint be able to pick the last backup when drive was swapped
and create new differential backup? (much the same was as usb rotation?)

It should, if the backup file (the full backup) remains in the changed backup destination.would Veeam endpoint be able to pick the last backup when drive was swapped
