Subject pretty much says it. There's probably some introspection/altering you'd have to do on the mount points to make sure they don't overlay something in your root file system of the worker, but seems like it should be doable.
This isn't terribly important for us, just a "would be nice". Most of our ZFS pools are on volumes excluded from Veeam backup but there's one or two small ones with configuration information that we do let Veeam for AWS back up. Of course we have multiple generations of snapshots in those too, and of course we could do volume-level restores.
