When I read the first note of https://helpcenter.veeam.com/docs/vbo36 ... tml?ver=60 it says:
"NOTE - Using multiple applications may impact the performance of your production SharePoint environment. This functionality will be deprecated in future versions of Veeam Backup for Microsoft 365."
What does that exactly mean? At the moment we can use a bunch of Backup Applications but in future not any more? Or not too many? Or only 1?
Please clarify a bit more.

Deprecated means, that we have planned to remove that feature.
For now and in our next version (v7), there will be no change and you can use them as before.
Our recommendation is to start with no backup applications and see how that works.
If you see performance issues, you may start adding a low number of backup applications. You have to monitor your backup jobs carefully. With too many backup applications, Microsoft may start throttling you even faster than with only 2-3 applications.
How many you can deploy depends on M365 your tenant and M365 licenses you have.
