Hello,
So the Microsoft/Office 365 backup has been running for over 14 hours and its showing a bunch of errors. I know its a case by case issue and I know that it depends on the amount of data but for it to take this many hours seems kind of outrageous. There are only three licensed users in this organization. The other issue is why does it have all these errors? I am not liking this whole Veeam experience.

What error messages do you see?
And how much data do those 3 users have?

I am getting "the operation has timed out" and I am also getting "the remote server returned an error (429)".

Are you on the latest build of VB365?
The last patch solved an issue where throttling on Microsoft's side can cause timeouts.
