If a GDPR right-to-erasure request comes in to remove any emails pertaining to an EU Subject then I can see how to search the backup for the subject's name etc, but how do I delete any such items I find?
Or do I have have to effectively delete the entire backup and re-run it again once I have removed the items from the Office 365 mailboxes?

Hello,
GDPR rates the requirement for backup higher than the right to be forgotten. That means that there is no requirement to delete anything in the backups.

You can remove data via PowerShell using Remove-VBOEntityData. I created a small GUI tool for this last year (see my blog post: https://foonet.be/2019/10/04/veeam-back ... ol-update/).
