Jobs default to 5:00PM on edit
Every time I edit a job, the time of scheduled backup changes to 5:00PM. For example, if I go add 10 users to a backup job, and change nothing else, it will change the backup time to 5:00PM and I have to change it back before saving. Version 4.0.0.2516.

This sounds like a bug as I haven't seen this before. Could you open a support case and let us know the case ID so we can follow it as well?

#04132921. Looking again, it looks like this is only happening for my OneDrive backup job. So, it might just be an issue with that one job. Will see what support comes back with.

Providing an update:
Support had me install an update from KB3119 and also update certain files from MSP 2549 Fix Pack v4 (version 4.0.0.2562, dated 2020-04-15). At first it appeared the issue still existed. But, the issue appears to have resolved after the job ran again the following night.
