Is it possible to backup OneNote Class Notebooks with Veeam Backup for Office 365? Unfortunately I have not found any current information about this.

We didn't test it specifically, but if my understanding is correct Class Notebooks are also stored within a SharePoint site collection and there shouldn't be any issues with protecting this data.
