Hi,
Does Veeam have a process that can help remove specific users files and folders from backup/archives?
We are being asked to remove some data for few users, and we would like to remove it if possible their data from the backups and archives to free up some space..

Yes.

But there are no archives here, only backup repos.
If you have taken a backup of this repos, then you can‘t remove it from this backup.
But from the vbo repo, it is possible with the command I provided.
Only entire user mailbox content, or specific sites/onedrives are possible.

@Mildur is correct. But I want to stress out that what you are doing is probably not the right thing to do. I am very much aware that these requests regularly come from HR or even legal, and mostly it is because of GDPR. But this is not how that legislation works or defines "the right to be forgotten". In fact, most likely you have a legal requirement to keep the data for the set retention. The right to be forgotten is on production data, but if there is a legal dispute, you still need the data on your backups for proof. So please ask the reason for this and explain that you are not obliged to remove the data from the backup.
