Hello, I'm new to VBO backup.
We just migrated from "on premise" to O365.
I have setup a Backup Repository with snapshot based retention for 3 Years.
Does this means it looks at the snapshot for the retention. So the mails in this snapshot would be deleted in 3 years?

You can find the full workflow in our user guide.
Snapshot mode will make a “snapshot” of a mailbox as it was on the day (first one is a full, then it’s incrementals) and will remove the data as the retention is reached.

Yes, with the snapshot-based retention that's normal - all the available historical data which is present in your production environment is backed up.
If you had item-level retention, you would have seen folders starting from 2013.
