Currently, we’ve implemented VBO to back up our entire O365 organization, which contains a couple of thousand users, all using EOL, OD4B, many SP sites, groups, etc. Our primary repository is the main VB&R repository at our datacenter (VBO uses a separate folder structure from VB&R). While we do need to back up our entire organization (tenant), we also need to be able to back up each component of O365 to separate repositories (folders) so that mailbox data isn’t stored with SP data, and OD4B isn’t stored with O365 group data, etc. We have a need to be more granular with our retention and compliance requirements (EOL has a different retention requirement versus SP data, etc.). It would help if we could create separate repositories for each O365 component (one for mailbox data, one for SP data, one for O365 groups, etc.).
We have staff onboarding and offboarding all the time (it’s the nature of our business). Currently with VBO, we can either select the entire organization (tenant) for backup, or we can select each individual O365 component in VBO (O365 groups, users, SP sites, etc.). If we create a backup job (just to back up SP sites), whenever someone adds a new site, we would need to edit the VBO backup job and add the new site to be included in the backup. If a create a backup job for users, each time we add a new user, we need to edit the backup job to add the user to the VBO selection so that they are being backed up.
To alleviate the administration nightmare of constantly having to edit VBO backup jobs several times a week, it would help if VBO would be able to simply select “ALL” SP sites, “ALL” users, “ALL” groups, etc. (without having to select each group, each user, each site, etc.) That way, when new users are added to our tenant, or a new SP site is created, the data is backed up by VBO without us having to edit the VBO backup job and adding the selected object. And we would be able to apply separate retention policies to each O365 “type” of data backed up by VBO.

This is already possible.
You have to create 3 backup repo (different paths on same or different storage), each can has his own configured retention settings
You have to create 3 Backup jobs with different Source data.
Choose entire organization (use the Add button to add your organization) and specify the proccessing option and everytime the entire organization is backuped with your choosen data source (mailbox, sharepoint, onedrive)

THANK YOU - that's exactly what we needed. I didn't realize after adding the organization that the EDIT button would let you edit the processes that were included in the backup job (and excluding didn't fit our needs). Might I recommend maybe changing the name of the EDIT button to "Edit Processes" or something like that? But none the less, AWESOME. Now, we can also back up our mailboxes more frequently than we do our sites, OD4B, etc.
