I wanted to confirm that my private/public channels Team data was being backed up, however I just noticed this new disclaimer in the backup job dialog:
To back up this data, do I simply choose the bottom option and choose my Org or do I need to manually select all my users, groups, etc.?
Private/Public channels Team Data (files on SharePoint) and settings can be protected by the first option.
For protecting messages/chats in teams channels, add the organization or a selected Teams to the list and edit the processing options:
Does that mean I need to have two jobs, one where the top option is selected, and another where the bottom option is selected, the Org is chosen, and the processing options are configured?
You don't need two jobs. One is sufficient to backup "everything".

Please note, if you like to have different retention policies for Teams/SharePoint, Exchange and OneDrive, you must use different backups jobs and different repositories. Retention is managed on the repositories.
