So whats the advatage of using Veeambackup for office 365?
I thought if I replace the files back they wont stay since there not saved on the computer but at Microsoft? wont Microsoft just delete them again if you replace them? since they are .ost?

if u restore an e-mail it will be back in the mailbox as it is up to you to delete it again or archive it. We restore it back to the server and not to the client

Niels is correct. To give some more information, the idea around VBO is that when a user (or even admin) makes a mistake and deletes items he/she can restore the item. But also imagine that a user gets fired but the admin (by mistake) deletes the wrong user in O365. Then everything can be restored. Soon we will support also OneDrive and SharePoint in O365 and those services encounter the same "issues"
Then we have the possibility of more criminal activities, potential ransomware and so on.
To conclude, think of all the potential issues that you can have with email/ onedrive/ sharepoint and that is exactly the reason why you want/ need O365
