Do I need to license all users in our company in Office 365? Or can I exclude some users. Or just include those 10 i need?
We just want to back up managers for instance.
Additionally can we back up from Office 365 Business Premium accounts?

You can protect any number of users you want. Moreover, you can get community edition for free and protect up to 10 users forever.
According to the information from the QA team, you should be able to protect business premium accounts.
