I usually use VMware but I am running a Hyper-V environment. I am adding a VBR server running 2012R2 but the Hyper-V hosts are 2008R2 servers, any issues with this setup?

Ryan, there're no issues with that. Just keep in mind, that if you're going to use offhost backup mode, than offhost backup proxy should have the same OS version as the Hyper-V host itself.
