Is there a way to backup a physical Solaris 10 server with Veeam B&R version 9.0 ?

Veeam B&R can be used to back up virtual machines only. Thanks!

You can try to use any native backup tools (if available) or virtualize this server and then use Veeam B&R to protect this VM.

Neither Veeam Endpoint Backup nor Veeam Agent for Linux supports Solaris OS.

You cannot backup it with any Veeam product, unless it's virtualized. Thanks.

I see. What about just the file system? We've mapped LUNs on SAN that host the database and we need to back this up

You can try to add the server to the list of managed servers and then use File Copy job. However, this job is not incremental one, meaning it performs full copy each time. So, I'm not sure how applicable you'll find this approach. Thanks.

UFS and ZFS filesystems used by Solaris are designed to not be taken offline, I'm sure that there exist(s) some native tool(s) to backup Solaris box.
