Is there a reason the backup copy job only processes one VM at a time? This results is much slower run times then the main backup.

Steven, please refer to this post for an answer. Please also note that backup copy job synthetically creates required restore points in target location from VM data stored in source backup repository, so it is not valid to compare it with the regular backup job.
