Veeam -
Is there any way to backup a VM (our exchange server) with MS iSCSI drives attached, again, not attached via vSphere as RDM's or vmdk's? Our backups complete but there are is no data if we try and restore a mail data store folder/drive.

Hi,
Just to clarify - you present some LUN as an iSCSI-target to you Exchange-VM's guest OS? If so, then no, you cannot have them backed up - Veeam will only backup virtual hard drives.

The luns are presented to the OS iSCSI initiators and not attached to the VM within vSphere. The drives are then setup as folders within our "D" drive.
Best bet would be to reattach and reconfigure exchange with vSphere hard disks as opposed to OS iSCSI? This is an inherited architecture and not something I architected from the foundation on up.

Correct, from my perspective it seems to be the only option. You can use an VEB export disks feature to do that.
