- Is't possible to backup files and folder of a guest vps and not only a full backup of a vps?
- Is't possible to backup files and folder of a physical machine and attacched storage ( SAN / DAS ) and NAS?

Yes, you should either use Veeam Agents or File Copy job.

- Is't possible to backup files and folder of a physical machine and attacched storage ( SAN / DAS ) and NAS?

Yes, you should either have block-level access to a storage (SAN / DAS), or use File Copy job (NAS).
