We have a need to set up a backup to run on demand on a SQL VM that has about 12 L databases.
Is there a way to create a backup job which only backs up the 6 SQL db's required instead of ALL?

if you wait for the next release (V12), then there will be a SQL plugin, which allows to select "per database"
Agentless backup of virtual machines and also the Veeam agent for Windows backup do "entire machine" backup per default. Doing hacks to somehow create a backup job that is doing file-based backup is not recommended.
