today I see myself confronted with the task to restore Exchange 2007 items from old backup files which are part of a GFS backup copy job.
I know, that SureBackup is not intended to check copied backup files which makes sense and which I agree to.
But how am I supposed to perfom application item recovery without that functionality?
(I know my worksrounds, but they are far away from being easy to manage)
Using the included exchange explorer. You do not need to boot the machine for you to be able to recover application items.
On the other hand you should be able to use the GFS restore point in a virtual lab and use the old method of recovering the items. But, by far, the easiest way to recover items is by using the specific explorers which are part of VBR 8 at least.

Unfortunately, Exchange Explorer cannot be used for recovering Exchange 2007 items.
I'm aimimg to use the old method, but it does not allow using restore points of a backup copy job
... which is my workaround
But as this includes handling a Domain Controller and an Exchange server, the risks of attaching it to the live networks are too high.
I really do not like to do that.
