Can a single folder per server be excluded from Backup/replication jobs?
I would like to add a folder at the top of each share with symbolic links back to itself. This folder would be named so it would be at the top of the folder list.
The purpose of this folder would act as a trap for ransomware trying to encrypt all folders/files on network shares. The ransomware would get to this folder, then link back to itself so it would be stuck in an endless loop. The problem with this plan is if Veeam tries to backup/restore/list a folder list, it would be caught in the same loop.
If Veeam is doing bit level backups from the disk, then it "shouldn't" be caught in this, but how about restoring? Both entire VM and file/folder only?

Yes you can exclude a single file or folder.
The option is to be enabled in Guest Processing wizard step.

if we can exclude a folder, can we then backup the excluded folder with a different job....different retention policy ?

Yes, absolutely, as these settings are per backup job/backup files chain.
