Does the file copy have the capability to back up open files like documents not database files?
I am testing the file copy to back up a cifs on VNX san and it does not appear to be quick and even stable to do terabytes of data.
Is this the best thing to use or is a 3rd party like backup exec better for this application?

No, File Copy is not designed for backup of open files.
