I am using version 5.02, and I am backing up to a 6 TB iSCSI NAS drive.
The iSCSI connection was established with the Windows Server 2008 initiator, and the iSCSI drive was formatted using GPT.
I read in the documentation that FLR was not possible from a GPT disk, but it seems to be working perfectly.
Is this just not OFFICALLY supported? I am writing procedures for other admins. I would like to use this feature, but not if we will run into issues down the road.

Looks like there is a slight misunderstanding in your post, as this limitation refers to virtual disks of backed up VMs. It doesn't matter where you store your backup files. You just won't be able to use native file level restore to recover individual files from GPT virtual disks (v6 adds this capability though).
