Do not setup the job to create full backup every day, as you did?
With the default job settings, the job will only create 1 full backup per week.

Or do you maybe want to have just a single restore point on disk (full backup) at any moment in time? In this case you can set the retention policy setting to 1.

To achieve that, you need active full to be scheduled every day the job runs and retention policy set to 1. These settings are available in the job wizard at the Storage step.

And if specifically want "overwrite" to happen, you should also change the backup mode to "reversed incremental".
