Guest OS file backup to disk?
I understand that Guest OS file backup to tape is an option with Veeam. Is it possible to do something similar but point the files to disk?

You can do this with the help of Veeam Endpoint Backup.

Hi,
Backup to tape jobs and backup copy jobs support VEB backups as a source, so you are good to go.

Yes, since backups created by VEB are stored in the same format as backup files created by Veeam B&R server.
