We are migrating to a newer server and I am looking for documentation on how to do this. We do use immutable backups so I'm not have to move all of our backups. I guess. I'm looking more as to how I should get my current configuration moved. I have search for documentation with no luck at this point.

You can leverage configuration backups to migrate your vbr installation to a new server.
You can read more about it in this kb article and the guide:
Veeam KB article - How to migrate Veeam Backup & Replication or Veeam Backup Enterprise Manager
Veeam Guide - Migrating Veeam Backup & Replication to Another Server
After the process, the new Veeam Server will be able to connect to your existing Backup Repo.
