Hi,
Please can you clarify if it is possible to migrate a Hyper-V VM running on an Intel based platform to a VMware ESXi VM running on an AMD platform in any way with Veeam?

Different CPU type will not be an issue. You can leverage instant recovery to migrate the Hyper-V VMs to vSphere:
