Monthly Full backups
We are modifying our retention policy for certain VMs. We want to be able to restore a VM from any point during a 1 week period as well as send a full backup to tape once a month. I am assuming I can set my jobs for forward incrementals with 7 rollbacks and monthly full backups, correct? Will that give me 7 vibs that are overwritten every week and 1 vbk that is overwritten every month? Is is possible to kick off a Backup Exec job to backup just the monthly vbk after it runs?

No, this is not correct. If you set a retention policy to 7 with active full backup specified only once a month, you will have one or two VBK files plus a chain of VIBs files that will vary from 30 to 38. Take a look at this topic for more details
As regards your second question, then it is possible. You should use this script to backup the latest VBK file: A script for backing up the latest .VBK file

I like this PowerShell script too. Works with any tape backup product that can operate from command line.
