I administer an ESXi 5.1 host (Dell PowerEdge T610) with four virtual machines - 3 x Windows Server 2012 and 1 x Windows 7 Professional. I have Veeam Backup Free Edition installed on one of the Server 2012 VMs, and I use it to manually backup all of the VMs to a Synology NAS. There are 7 workstations that connect to the servers for various purposes. The servers operate as file and application servers. I plan on getting Veeam Backup and Replication v7, but I have some questions first.
If the ESXi host gets destroyed or stolen, the Veeam installation is gone with it. Should I just plan on installing Veeam Backup Free Edition on one of the workstations in the event of a disaster and recovering the VMs that way, or should I have the company purchase a dedicated machine to run the Veeam backups to the Synology?
Ultimately, my goal is simply to have as quick of a recovery of the entire server environment in the event of fire, theft, or other disaster. What is the ideal method for implementing this? I want to prepare for two different recovery scenarios: A) Quick recovery onto a new local machine running ESXi, B) Quick recovery into a cloud-hosted VMWare environment if the decision maker decides he doesn't want a local server anymore (he's already interested in potentially moving the entire local server setup to a remote-hosted service).

Will, in case of DR, you can simply install Veeam Backup on any workstation, browse to the backup files, and perform recovery. Thanks.
