Is there anyway in Veeam to run a report of all VM's with no recent backup - whereby you specific what you mean by recent i.e. in the past 48 hours?

Have a look at the protected VM's report in Veeam ONE. It does exactly that!

Also in the upcoming version of Veeam ONE v8 there will be a predefined alarm for all VMs without recent backups.

Can you export the reports to PDF or similar. I dont currently have access to veeam but I presume this report lists a last backup date for all VM's.

Yes, you can schedule report generation and export it either to Excel or PDF format. This report has different parameters, but it can list all VMs that didn't have backups for the past XX hours.
